This Champagne is some find! The history of the Haton Champagne House begins in 1610 during the reign of LOUIS XIII with the acquisition of the first plots in Damery by François Haton. In 1928, Octave Haton embarked on a new direction for the family business by starting the vinification of his own Champagnes. 

A blend of 35% chardonnay, 35% pinot noir and 30% pinot meunier, with the all-important time on lees of more than three years (12 months is the minimum by law). The wine has a cornucopia of aromas, brioche, white flowers, just-ripe stone fruit and grapefruit pith. The palate is layered, creamy and sophisticated and has real presence and length. Serve with smoked salmon on a blini with a dollop of Yarra Valley salmon roe.
